THE VITALE FAMILY

For over two decades, the Vitale family has
set the standard for fine dining in Maryland. Combining almost
50 years of successful food service experience, the family
utilizes their collective flair for exquisite cuisine and
gracious hospitality to create the ultimate dining experience
for their guests.
In 1981, Aldo and his wife, Regina Vitale, opened
Aldo's, their pioneer venture in full service dining, in rural
Maryland. Preserving strong Italian traditions of freshness
and quality, the finest ingredients available were merged
into a menu accentuating the culinary heritage and diversity
of the Italy in which Aldo was born and raised.
Throughout the eleven years the Vitale family
owned and operated Aldo's, each member of the family cultivated
and enriched a passion for the restaurant business, as well
as a shared affinity for the finest Italian cuisine. With
Aldo heading the kitchen, Regina managing the front of the
house, and their then-teenage sons Sergio and Alessandro managing
the restaurant during lunch hours, the restaurant maintained
the family's high family standards for food and service.
During this time, the Vitale family built a
reputation for exceptionally delectable baked desserts, particularly
their award-winning tiramisu. In 1993, to meet customer demand,
the family opened "La Pasticceria Aldo," a wholesale
bakery, and later sold Aldo's.
In the kitchen, the sure hands of Sergio led
the production of desserts and pastries which were destined
for Nordstrom cafes, Sutton Place Gourmet, Dean & DeLuca,
Balducci's, Gracies, and other local and national clients
from Maine to Florida.
It was during this time that Aldo first discovered
the High Street location in Baltimore's Little Italy that
would provide the setting for the Vitale family's much anticipated
return to the restaurant business, "Aldo's Ristorante
Italiano."
After nearly three years of planning, the Vitales
conducted the complete renovation of two abandoned brownstones
that date back to the 1840s. Eleven months of construction
culminated in a sumptuous and elegant decor in soft hues of
ivory and rose that immerse the rooms in deep and classically
Italian tradition. This atmosphere serves as a backdrop for
delicious aromas, gracious hospitality and culinary sophistication.

The dedication of owners Aldo, Regina, Sergio
and Alessandro is evident in every phase of operation, from
greeting their Guests at the door to searching worldwide for
the freshest ingredients that have helped to establish their
tantalizing cuisine. Each member of the family works diligently
to assure excellence in the Guest's dining experience. In
addition to Chef/Owner Aldo, wife Regina and son Alessandro
serve as hosts, and Sergio acts as wine director. The family
complete involvement with the restaurant maintains their commitment
to quality.
The combined efforts of the family have proven
successful since the opening of Aldo's Ristorante Italiano.
It has quickly distinguished itself for its unique regional
cuisine and innovative decor, hailed as "Baltimore Premier
Italian Restaurant."
